This tasty treat is worth 3.5 points on the plan, and the following ingredients make 12 muffins.
50g of caster sugar
450g of ripe, mashed bananas
100g of hard margarine
2 medium eggs, well beaten
1 teaspoon baking powder
225g self-raising flour
150g of cranberries

The first thing to do is preheat the oven. The correct temperature is 200 degrees Celsius/ 400 degrees Fahrenheit. Then fill a 12-muffin tray with paper muffin liners. Next, in a big bowl, cream the sugar with the margarine until the mixture is light and fluffy. Then whisk this together with the bananas and the eggs.

The dry ingredients are next, so you'll want to carefully sift in the flour and baking powder. Once it's all sifted in, you'll want to beat it rapidly and fold in the cranberries.

Divide the mixture into the 12 paper liners, and bake for 20-25 minutes.
